This famous local Akita delicacy was created in Yokote City, Akita Prefecture around 1953 (Showa 28), and by 1955 it had become so popular that about 100 restaurants in the city were serving it. The key to the flavor is the original sauce, which has a soft taste and is blended with dashi. Of course, the noodles are specially made.

This is an organization that promotes "Yokote Yakisoba" and Yokote City, Akita Prefecture, nationwide, aiming to make Yokote the city of yakisoba. Its activities are centered around stores that cook and sell "Yokote Yakisoba." "Yokote Yakisoba" was born in 1953 (Showa 28) with its roots in food stalls that appeared shortly after the war. By the late 1950s, it had become so popular that it was being served in about 100 stores in the city. Many people from within Akita Prefecture and outside the prefecture visit Yokote City to try "Yokote Yakisoba."
