[Characteristics of local cuisine]

・This local delicacy has been loved by locals since around 1953. It won the Gold Grand Prix at the 4th "Local Gourmet Town Revitalization Festival! B-1 Grand Prix" in Yokote.

- We use boiled noodles, which have a chewy texture and are easy to soak up with sauce.

・Worcestershire sauce blended with stock for a mild flavor with less spiciness.

・The pickled ginger that is usually served with yakisoba is too spicy for children to eat, so in "Yokote Yakisoba" they use fukujinzuke pickles instead of pickled ginger. *There are various theories.

・"Ankake Spaghetti" was invented by our founder, Hiroshi Yokoi, at a hotel where he was once trained. It was created by combining meat sauce, a classic pasta sauce, with demi-glace sauce, which is used in Western cuisine.

・The original sauce is a mixture of 90% vegetables and 10% meat. It is simmered for two days and then aged for a week to bring out the umami of the vegetables and the richness of the meat, making it a delicious dish only available in Nagoya.

・Made with black pepper, which has an exquisite aroma and spiciness, this sauce is "thick, spicy and punchy."

・The 2.2mm thick noodles are a perfect match for the spicy, punchy sauce. They have a chewy and springy texture.
