[Characteristics of local cuisine]
・"Ankake Spaghetti" was invented by our founder, Hiroshi Yokoi, at a hotel where he was once trained. It was created by combining meat sauce, a classic pasta sauce, with demi-glace sauce, which is used in Western cuisine.

・The original sauce is a mixture of 90% vegetables and 10% meat. It is simmered for two days and then aged for a week to bring out the umami of the vegetables and the richness of the meat, making it a delicious dish only available in Nagoya.

・Made with black pepper, which has an exquisite aroma and spiciness, this sauce is "thick, spicy and punchy."

・The 2.2mm thick noodles are a perfect match for the spicy, punchy sauce. They have a chewy and springy texture.
